DAIRY FREE COCONUT CAKE

3 eggs
200 gr sugar
125 gr soy yoghurt
100 ml vegetable oil
150 gr desiccated coconut
150 gr plain flour
16 gr baking powder

1. Whisk eggs and sugar until light and fluffy
2. Add soy yoghurt and oil
3. Add desiccated coconut and flour gradually and baking powder. Keep mixing
4. Bake at 180° for 45 minutes or until a wooden skewer inserted into the center of the cake comes out clean
