DAIRY FREE PEA SOUP

FOR 2 PEOPLE:

200 gr peas (fresh or frozen)
1 small potato (around 80/90 gr), peeled and chopped
1 shallot, chopped
2 tbsp soy cream
1/2 vegetable stock cube
500 ml water
2 tbsp extra virgin olive oil

1. In a pan, heat 2 tbsp of extra virgin olive oil and the shallot for a couple of minutes
2. Add peas and potato and stir for couple a minutes
3. Add 1/2 vegetable stock cube and boiling water (if it gets too thick during cooking you can add some boiling water)
4. Cook at low heat for an hour
5. Puree the soup with a hand blender
6. Add 2 tbsp of soy cream and stir well

Hint: with a pressure pan the cooking time will reduce drastically and you could have a lovely and healthy soups in minutes
