It’s not so common to have a slice of cake for breakfast in Ireland. Well, up until now 🙂 This cake is delicious yet simple and easy to make. I love to dunk it in a creamy soy cappuccino. You can also cut it in half and spread your favourite marmalade or jam: not bad for an afternoon tea.

4 eggs
200 gr white sugar
200 gr all purpose flour
50 gr cornflour
150 gr vegetable oil
16 gr baking powder
1 tbsp vanilla extract

1. Whisk eggs and sugar until light an fluffy
2. Add flours gradually and mix well
3. Add oil and vanilla extract and mix well
3. Finally add baking powder
4. Bake for 40 minutes at 180° or until a wooden skewer inserted into the center of the cake comes out clean
