DAIRY FREE SHORTCRUST PASTRY

I JUST CAN’T STOP EATING THESE BISCUITS!!!


2 eggs
120 gr sugar
80 gr olive oil
350 gr all purpose flour
30 gr corn flour
30 gr almond flour
1 tsp baking powder
optional: lemon zest

1. In a bowl mix quickly together eggs, sugar and olive oil with either a fork or with your hands
2. Gradually mix flours and baking powder previously mixed together
3. Knead quickly
4. Wrap in cling film and chill for 30 minutes
5. Roll out pastry between two sheets of baking paper
