This is a super fast, super easy recipe, excellent if you have any leftovers in the fridge. I have used courgettes but you can use any other ingredients you like.
1 dairy free shortcrust pastry
200 ml soy cream
pinch of salt and pepper
1. In a bowl, mix eggs, soy cream, pinch of salt and pepper
2. Place shortcrust pastry in a pie plate
3. Pour the eggs mixture and layer rounds of courgettes (cut very thinly)
4. Bake 40 to 50 minutes at 180° until knife inserted in center comes out clean. Leave for 5 minutes before serving
