This is a must do whenever I have egg whites leftover. These coconut macaroons are just delicious and so easy and quick to make. I’m giving the doses for 1 egg white, so that you can easily multiply for as many egg whites as you have.

1 egg white
40 gr sugar
80 gr shredded coconut
pinch of salt

1. Whisk egg white with a pinch of salt until soft and gradually add sugar; it doesn’t need to become very stiff
2. Add coconut flour and mix
3. With your palm, form little balls and place them on parchment paper
4. Bake at 170° for 15-20 minutes until golden
5. Let them cool completely before serving
