DAIRY FREE PANNA COTTA

Even if you are not lactose intolerant you will love this!

RECIPE FOR 6 PEOPLE
500 ml soy or coconut cream
100 gr white sugar
1 tbsp vanilla extract (or 1 vanilla pod)
4 gelatine leaves (or agar agar for a vegan alternative)
Fresh or frozen fruit to decorate

1. Soak gelatine leaves in cold water
2. Place cream, sugar and vanilla extract (or seeds of vanilla) into a pan, stir and bring to a simmer for 4 minutes (do not bring to boil)
3. Take off the heat, squeeze the water out of the gelatine leaves and add to the pan; stir until the gelatine has dissolved
4. Divide the mixture among 6 glasses or ramekins
5. Leave to cool and place into a fridge for at least 4 hours
6. Cut fresh fruit into pieces, add lemon juice and sugar
7. Alternatively, heat frozen fruit with some sugar into a pan for 5 minutes; let it cool completely
8. Decorate with the fruit just before serving
