I have discovered this cake last June while walking along the Camino de Santiago, in the north of Spain. It’s an ancient galizian recipe, made with a few and simple ingredients, so precious that the EU gave it the PGI (Protected Geographical Indication) status. A little treasure to be preserved. And it’s naturally dairy and gluten free!

5 eggs
250 gr sugar
250 gr almond flour
lemon zest (1/2 lemon)
1 tsp cinnamon
powdered sugar to decorate

1. Whisk eggs and sugar
2. Add all other ingredients and mix until everything is well amalgamated
3. Bake for 30 minutis at 180° fan
